Castlevania II: Simon's Quest takes place after the destruction of Dracula. It turns out that his remaining body parts are still causing terror and evil in the land. You must find his the remains of his corpse and bring them together to destroy them. Much like the first Castlevania (NES), Simon's Quest is a side-view platformer where you swing your whip to kill thousands of the Count's henchmen. However, unlike the first game, Simon's Quest is more of an action adventure that doesn't have a liner storyline. Although many fans that liked this style more, the bulk of the American market was annoyed by it (although the terrible translations making the game impossible without a hint guide couldn't have helped).

Castlevania II: Simon's Quest has great music for its time; especially the track Bloody Tears which anyone who played the game back in the day will remember. Several of Castlevania 2's tunes have been remixed in later Castlevania games. The music is eerie, but it still gives the strength that any action game needs. The titles come from the remixes that were named in later games. The NES release has a more limited range of instruments than the original Famicom Disk System release, but makes up for this with stronger percussion synthesis and refinements to some of the compositions.

The western NES release does not have any in-game credits, but the Famicom Disk System release, Dracula II: Noroi no Fuuin (FDS) does have a staff list, which credits Kenichi Matsubara, Satoe Terashima, Kouji Murata and Yoshiaki Hatano. None of them are credited with any specific role, however, so it's unclear who contributed what (although Hatano likely didn't work on the music, as his other credits are for sound effects), or who rearranged the FDS soundtrack for the NES release.
Ripping NES music is a very arduous process that is beyond the scope of this site.
